Luckily, my refusal to accept a waffle-free weekend led to this gluten-free, plant-based waffle recipe. It's made from oats, ground into a flour in a blender. Add in flax, almond milk, and a few spices...and you've got yourself a super tasty breakfast that doesn't make you feel like garbage for the rest of the day.

First things first...happy new year! It's the first day of 2018, and I am so excited to see what the year will bring. I thought it would be fun to share a healthy treat, instead of a cleanse this year. Don't get me wrong, I will be hitting the green juice and veggie soups hard this January, but it's also fun to have a treat on hand that doesn't derail your wellness efforts. This peppermint cacao bark is just the thing. It's vegan, gluten free, & refined sugar free. It can easily be made raw and/or completely sugar free as well. (I used to make the sugar free version all the time when I was fighting off Perioral Dermatitis.) It was a lifesaver.

Just use your favorite gluten free pasta, and you'll be all set. The best part about this recipe is that it is made up of whole food ingredients. No creepy thickeners or heavily processed vegan cheese products here! It's absolutely packed with veggies (secret ingredient!) and nutrients...with amazing flavor.
I know it's late October and we are all ramping up for Halloween...but this time of year also marks the beginning of soup season! There are so many beautiful, fresh vegetables everywhere, the chill is settling in, and warm food finally sounds good again after a summer of smoothies and salads. This vegan cream of mushroom soup with toasted seeds and sage makes an amazing Fall meal.
